Baking powder usually consists of an alkaline base (bicarbonate of soda), a weak acid (tartaric acid or, more often, synthetic acidifying agents) and a buffer (usually corn starch). The buffer prevents the acid from activating the bicarbonate prematurely, or until a liquid is added. Once the reaction starts, baking powder helps baked goods rise.
Good Life Organic Baking Powder has an innovative formula that replaces the tartaric acid with locally sourced organic baobab fruit powder, replaces cornstarch with organic arrowroot powder, and uses BP grade bicarbonate of soda.
